TERTIARY BUTYLHYDROQUINONE
TBHQ, an antioxidant with a mono-tertiary-butylhydroquinone structure, is a white, crystalline substance with a characteristic odor. Its use to increase stability in vegetable oils is permitted by many countries. The antioxidant effect of TBHQ in vegetable oils is considerably greater than that of other antioxidants.
TBHQ is used in products such as soybean, canola, peanut, olive, sunflower, palm and corn oils, as well as margarine, fried potatoes and other potato products, and instant noodles.
TBHQ acts as an excellent antioxidant in edible liquid and solid fats. It reduces nutritional losses that may occur in liquid oils, and preserves quality and freshness during long-term transport of crude oils. In addition, it broadens the distribution of liquid oils used in food processing, increases the shelf life and freshness of fried oils, and helps preserve such products. It also prevents increases in cholesterol levels in liquid and solid fats, making the use of saturated fats easier.
