Glyceryl Stearate, CAS 31566-31-1, is a raw material used as emulsifier, emollient in cosmetics - emulsifier, food - emulsifier applications. ISF CHEM supplies it in GMS 40-90 grade.
Mono- and diglyceride mixture obtained from stearic acid and glycerol. Used in cosmetics as an emulsifier and emollient.
Glyceryl Monostearate, also known as glycerin monostearate (GMS-90).
Glyceryl monostearate is soluble in both oil and water. It is strongly absorbed at the water/oil interface and can easily form a liquid crystalline phase together with water.
In bakery products such as bread and cakes, GMS gives soft-textured products a white gloss and volume, retains moisture, delays staling and extends the shelf life of products.
It prevents the separation of oil and water phases in margarines.
It prevents oil leakage in chocolate, halva, olive paste, processed cheese, salami and sausages, and improves the structural properties of these products.
It prevents oil separation in mayonnaise and salad dressings.
It prevents milk fat from separating from water in ice cream and provides firmness.
It prevents the essence used in soda and similar non-alcoholic beverages from separating and floating to the top of the drink.
It increases the solubility of beverage powders.
It delays staling in biscuits, wafers and similar products.
It delays oxidation in milk powder and increases solubility.
It prevents separation of fruit and syrup in jams and marmalades.
It increases porosity and homogenization in ready-mix cake batters.
It increases solubility in products such as powdered whipped toppings, fruit paste, bouillon tablets and coffee whiteners.
It is used to ensure a homogeneous mixture of essence in chewing gum.
