Polyglycerol polyricinoleate, CAS 68936-89-0, E476, is a raw material used as emulsifier in food, cosmetics applications. Supplied by ISF CHEM.
Emulsifier obtained by esterifying condensed castor oil fatty acids with polyglycerol. Evaluated by EFSA as food additive E 476.
PGPR is insoluble in water and ethanol but soluble in oil. It is used in the production of ice cream coatings, chocolate, confectionery, margarine and butter. Its most important functions are to offer a major cost advantage by reducing the amount of fat used, and to make the product flow more easily.
PGPR is an emulsifier and an important viscosity-reducing product in chocolate and similar products and coatings. In chocolate production, PGPR reduces friction between milk, sugar and cocoa, making the mixture more fluid. It is used at levels below 1%.
PGPR is used to reduce the fat content of chocolate and to improve flow. It makes application during coating easier and allows the coating thickness to be reduced. It prevents pores that may form on the chocolate surface. It also creates a shine on the surface.
